Ingredients
- 3 large eggs
- 4 cups heavy whipping cream
- 1 cup granulated sugar
- 3 teaspoons vanilla
- 2 cups fresh or frozen blueberries (I use fresh blueberries)
- 10 - 12 ounces (1 bag) white chocolate chips
- 16 ounces (1 loaf) French bread, day old and cut into 1-inch cubes
Here's how to make it:
- In a large bowl, combine eggs, cream, sugar and vanilla.
- Stir in blueberries and white chocolate chips.
- Stir in bread cubes. Set aside until bread is softened, about 15 minutes. Pour the mixture into a greased 13x9-inch baking dish. (For best results, be sure your French bread loaf is a little dry, not too soft.)
- Bake in a preheated 350-degree F oven, uncovered, until a fork inserted in the center comes out clean, about 50 to 60 minutes (if you feel the bread pudding is browning too quickly cover loosely with foil). Let the bread pudding stand 5 minutes before serving.
