4-Ingredient German-Style Coconut Macaroon Cookies Recipe (Kokosmakronen)

Sweet, chewy and just a little crisp on the outside, these Germany-style four-ingredient coconut macaroon cookies called Kokosmakronen are a must bake! Egg whites, vanilla, sugar and unsweetened shredded coconut are mixed together then baked for 20 minutes until they are just lightly golden brown. They are the perfect cookie to eat as a snack, for dessert or with coffee or tea.

You could add some lemon zest to the cookie recipe for a little lemon accent. To fancy them up, melt some chocolate and drizzle it with a fork over the cookies or dip the bottoms of the cookies into the chocolate. This easy four-ingredient cookie recipe will become a most-requested family recipe. Store the cookies in an airtight container.

Ingredients

  • 4 egg whites
  • 1 teaspoon vanilla 
  • 1 cup granulated sugar
  • 2 cups unsweetened shredded coconut

Here's how to make it: 

  1. Put the egg whites into a mixing bowl. Beat with an electric mixer until stiff, about 5 minutes. Add the vanilla. 
  2. In another bowl, combine the coconut and sugar. Slowly add the mixture to the egg whites until well mixed. (Be gentle when mixing so you don't deflate the egg whites.)
  3. Using a spoon, drop about 1 heaping teaspoon of dough for each cookie onto parchment paper-lined baking sheets. 
  4. Bake in a preheated 300-degree F oven for about 20 minutes, or until lightly browned (do no overbake). Remove to cool.
