Cheesy Hash Brown Potato Casserole Recipe Is a Side Dish Showstopper by 30Seconds Food

Why do we wait until the holidays to make potato casseroles? Baked potato casseroles like au gratin potatoes, loaded potato casserole, Amish mashed potato casserole and hash brown casserole are good any time of the year (or week!).
This easy cheesy garlic and herb potato casserole recipe is one for the books. The casserole is made with frozen hash brown potatoes, sour cream, cream of mushroom soup, mozzarella and Parmesan cheese, onion, garlic and herbs. The topping is simply melted butter, herbs and cornflakes.
Use whatever fresh herbs you have on hand. Parsley, fresh chives, sage, oregano, rosemary and thyme are good options and add so much flavor and freshness. If you're really a garlic lover, add more garlic to the high-protein recipe. (Check out the health benefits of protein.)

Ingredients
- 32 ounces (1 bag) frozen diced hash browns
- 2 cups sour cream
- 10 ounces (1 can) cream of mushroom soup
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 small onion, diced
- 2 tablespoons fresh chopped herbs (rosemary, thyme, oregano, sage, chives, parsley, etc.), divided
- 4 cloves garlic, minced
- 2 cups crushed cornflakes
- 1/2 cup melted butter
Here's how to make it:
- In a large bowl, stir together the potatoes, sour cream, cream of mushroom soup, mozzarella, Parmesan, onion, garlic and half the herbs. Season well with salt and pepper. Pour the mixture into a casserole dish. (You could change up the cheese in this potato casserole. Gruyere, Swiss, provolone, white cheddar, fontina or whatever you enjoy would work.)
- In a small bowl, combine the cornflakes, butter and remaining herbs. Sprinkle over the potatoes.
- Bake in a preheated 350-degree F oven for about 1 hour or until heated through and golden brown. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
