Ingredients
- 3 cups raw, unsalted walnuts
- 16 pitted dates
- 2/3 cup raw cacao powder
- shredded coconut, cacao powder or chopped nuts, for rolling truffles
Here’s how you make it:
- In a food processor, blend walnuts to a meal consistency. (If you want to add a little more sweetness, fold in some chocolate chips after blending.)
- Slowly add the dates to make a dough.
- Add the cacao powder and blend to make a chocolate dough.
- Roll small balls of the mixture to make truffles. (The amount of energy balls depends on the size of the balls you make.)
- Roll truffles in shredded coconut, cacao powder or chopped nuts. Refrigerate for at least an hour to set. Store energy balls in an airtight container in the refrigerator.
