Crispy Roasted Turkey Legs Recipe: Thanksgiving For Just a Few

Cooking for just a few this Thanksgiving? Like turkey thighs, turkey legs are more than just a Renaissance Festival novelty food item. Turkey legs are a budget-friendly ingredient to cook any day of the week. They're also perfect for a small Thanksgiving.

To make these crispy, gluten-free oven-baked turkey legs you will need olive oil, smoked paprika, garlic powder, dried rosemary, dried thyme, ground sage and turkey legs with the skin on. The low-sodium turkey legs are seasoned with the spices and then roasted in the oven until golden, cooked through and crisp.

Serve these crispy, juicy herbed turkey legs with your favorite side dishes. Use the leftovers to make turkey sandwiches or turkey soup.

  • Be sure to pat the turkey legs dry before seasoning and baking. This helps achieve the crispiest skin.
  • You could use turkey thighs instead of turkey legs.
  • This recipe could easily be cut in half for two servings. 

Here's how to make it: 

  1. Put the turkey legs onto an aluminum foil-lined baking sheet. Drizzle with the olive oil then sprinkle with the seasonings and salt and pepper, to taste. 
  2. Bake the turkey legs in a preheated 425-degree F oven for about 45 minutes (if they start to get too brown, cover with foil). The internal temperature should be 165 to 170 degrees F. Let the turkey rest a few minutes before serving.
