Grilled ​Mushroom Bun Ground Beef Sliders Recipe: No Bun Here

Who needs a bun when you can make these grilled mushroom bun ground beef sliders? The mushrooms are grilled then used in place of a bun. Genius!

Serve this healthy slider recipe as a light dinnerlunch or even as an appetizer. You could use ground chicken or ground turkey in place of the ground beef.

Ingredients

  • 1 pound ground beef (90 to 94% lean)
  • 1/4 cup finely diced green onion
  • 1 tablespoon Worcestershire sauce (can use gluten-free Worcestershire sauce)
  • 1 tablespoon soy sauce (can use gluten-free soy sauce)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 12 mushroom caps, sliced in half horizontally (2 1/2 to 3 inches in diameter)
  • 6 slices reduced-fat Swiss cheese
  • 3 Roma or plum tomatoes, sliced
  • 2 cups lettuce

Here's how to make it: 

  1. Combine the beef, scallions, Worcestershire sauce, soy sauce, garlic powder and salt in a bowl. Mix well. For mixture in 12 small, flat patties.
  2. Coat grill rack lightly with cooking spray. Add beef patties and grill, covered, over medium heat until desired doneness.
  3. Add sliced mushroom caps to grill rack and cook for 1 to 2 minutes per side (mushroom should still be somewhat firm). 
  4. Cut cheese slices into four pieces each. Assemble sliders using sliced mushroom caps as buns, and add two pieces of cheese per slider. Serve with tomato slices and lettuce.
