This sponge cake recipe is baked in a 6-inch round cake pan, but if you don't have one, no worries! If you have a larger pan, the cake will be thinner and require less baking time. To make this sponge cake recipe you will need to grab the following four ingredients: eggs, powdered sugar, vanilla extract and either cake flour or all-purpose flour. If you've never worked with cake flour, the main difference from all-purpose flour is the gluten content. All-purpose flour's gluten content is about 10 to 13 percent. Cake flour has the lowest gluten content, at about 7 to 9 percent, which results in softer, lighter cakes. Both will work for this recipe.

- 4 eggs
- 1/3 cup powdered sugar
- 1 teaspoon vanilla
- 1/2 cup cake flour or all-purpose flour

- Combine the eggs and powdered sugar in a bowl. Beat with an electric mixer until it is light and foamy. Add the vanilla and continue mixing.
- Sift the flour into the mixture and stir until there are no clumps. Whisk the batter until well combined, then use a spatula to fold the mixture.
- Pour the batter into a 6-inch round baking pan that's been lined with parchment paper. Drop the pan on the counter to remove any air bubbles.
- Bake in a preheated 320-degree F oven for about 25 to 30 minutes or until golden on top. Cool completely before removing from the pan. Store the cake in an airtight container to keep it fresh.
