Ingredients
- 2 pounds boneless chicken tenders
- 3 tablespoons hot sauce (divided)
- 3 cups flour
- 3 eggs
- 1 1/2 cups buttermilk
- vegetable oil, for frying
Nashville Hot Sauce
- 5 tablespoons cayenne pepper
- 2 tablespoons brown sugar
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Here's how to make it:
- Season the chicken with salt and pepper in a bowl. Add 2 tablespoons of the hot sauce and toss to coat. Cover and refrigerate at least 2 hours or overnight.
- Put the flour into a shallow dish. Stir together the eggs, buttermilk and remaining 1 tablespoon of hot sauce in a bowl.
- Heat about 3 inches of oil in a large skillet to 360 degrees F.
- Dredge the chicken in the flour, then into the buttermilk then back into the flour. Put them carefully into the hot oil (do not overcrowd the pan). Fry until golden brown on both sides, about 3 minutes per side. Remove to a wire rack and repeat with remaining chicken.
- To make the sauce, combine 1 cup of the cooking oil with all the sauce ingredients. Stir until smooth. Pour over the cooked chicken tenders. Serve with bread and pickles or ranch for dipping.
