If you look for glazed carrots recipes, you’ll find those that call for brown sugar, maple syrup, chicken broth, cinnamon, orange juice/zest, etc. White wine is less common, but it works well. Consider it the next time you’re looking for a new tasty side dish.
This low-calorie, low-sodium carrots recipe requires only five ingredients: carrots, extra virgin olive oil, water, honey and your favorite white wine. The flavorful carrots cook up in about 10 minutes and require minimal prep. Now that's a perfect gluten-free side dish, if you ask me! Plus you get the health benefits of carrots.

Ingredients
- 6 medium carrots, halved lengthwise and cut in 2-inch pieces (you also can use baby carrots)
- 1 tablespoon extra virgin olive oil
- 1 1/2 cups water
- 1 tablespoon honey
- 2 tablespoons pinot grigio (or your favorite dry white wine)
- fresh or dried herbs, for garnish (optional)
Here’s how to make it:
- In a large skillet, combine carrots and olive oil, then add water. Season with salt and pepper, if desired. (You can use cut carrots or baby carrots for this recipe.)
- Cook over medium-high heat until carrots are tender, about 6 to 8 minutes.
- Add the wine and honey. Cook and stir for about 2 minutes or until carrots are glazed. (I used pinot grigio, but you can use your favorite white wine for this recipe.)
- Garnish with herb sprinkle, if desired. Serve. Store the carrots in an airtight container in the fridge and reheat in the microwave.
