Quick Walnut Basil Pesto Recipe: No Need to Buy Those Pricey Pine Nuts

My basil plants are finally taking off, and now I find myself overloaded with fresh basil. Not a bad thing! Pesto is a favorite around here, but have you seen the price of pine nuts lately? With a bag of healthy walnuts in the pantry, I decided to try something new: a basil pesto recipe with walnuts.

This easy pesto recipe tastes amazing! The addition of fresh parsley adds even more freshness. For a little heat, stir in some crushed red pepper flakes. Use this pesto on pasta, bread, vegetables, stir it into dips, pasta salads or salad dressings or use it as a dip for fresh vegetables, pita chips or homemade naan bread.

Servings: Makes about 1 cup

Ingredients

  • 2 cups fresh basil leaves, packed
  • 1 cup fresh parsley, packed 
  • 1/4 cup Parmesan cheese 
  • 1/4 cup walnuts
  • 4 cloves garlic 
  • 1/2 cup olive oil

Here's how to make it:

  1. Put the basil, parsley, Parmesan, walnuts and garlic into a blender or food processor. Pulse a few times to start chopping it up.
  2. With the motor running, pour in the olive oil. Blend until combined and desired consistency. Season with salt and pepper.
