Creamy Lemon Deviled Eggs Recipe Is a Refreshing Bite of Springtime

Super creamy and full of bright lemon flavor, this easy lemon deviled eggs recipe is a keeper. It may become your most-requested appetizer recipe for spring and summer.

Be sure to really mash the egg yolks up well so you can achieve the ultimate creaminess. Store the eggs in the refrigerator until ready to serve.

  • 12 hardboiled eggs, peeled and cut in half lengthwise
  • 2 teaspoons olive oil
  • 1/4 cup mayonnaise
  • 2 teaspoons lemon zest
  • 1 teaspoon lemon juice

Here's how to make it: 

  1. Put the egg yolks into a bowl. Mash well with a fork until there are no lumps of egg yolk. 
  2. Add the olive oil, mayonnaise, lemon juice and lemon zest. Season with salt and pepper. Mix well and until very smooth and creamy.
  3. Pipe or spoon the filling back into the egg white halves. Garnish with chopped parsley, if desired.
