To make these baked Cornish game hens, you will need just seven ingredients. The hens are marinated then bake up in the oven. The Cornish game hens also can be split in half before cooking, but be sure to adjust the cooking time because they will cook faster that way.

Ingredients
- 1/2 cup pomegranate molasses
- 3/4 cup honey, plus more for serving
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper or crushed red pepper flakes (or to taste)
- 5 - 6 cloves garlic, pressed or finely minced
- 2 - 3 Cornish game hens
Here's how to make it:
- Combine the pomegranate molasses, honey, coriander, cinnamon, cayenne and garlic in a large plastic food storage bag. Add the hens and marinate in the refrigerator for at least 6 hours and up to overnight.
- When ready to cook, remove the hens from the marinade. Pour the marinade into a small saucepan. Cook the marinade for about 10 minutes or until thickened. Set aside.
- Put the hens into a baking pan. Sprinkle the hens with salt and pepper. Bake in a preheated 425-degree F oven for about 40 to 50 minutes, or until the internal temperature is 165 degrees F, basting often with the marinade. If the hens start to get too dark, cover with foil. Because of the molasses and honey, watch them closely.
- Remove from the oven and let the hens rest a few minutes before serving. Garnish with pomegranate seeds, if desired, and drizzle with honey, if desired.
