Ingredients
- 3/4 cup (1 1/2 sticks) butter, softened
- 3/4 cup maple syrup
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- dash of salt
- 3 cups old-fashioned oats
- 1 cup chopped pecans or walnuts (optional)
Here's how to make it:
- With an electric mixer, beat the butter and maple syrup together until creamy. Add the eggs and vanilla. Mix well. (We recommend real maple syrup, not the imitation stuff.)
- In another mixing bowl, combine the flour, baking soda, cinnamon and salt. (To make these cookies gluten-free, use gluten-free flour. If you're a cinnamon lover, feel free to add more cinnamon, to taste.)
- Add the dry ingredients to the wet ingredients until just combined.
- Mix in the oats and the nuts, if using. (You can add in some chopped pecans or walnuts, but that is optional. As a variation, you could add in some raisins or chocolate chips.)
- Drop by tablespoons onto cookie sheets. Bake in a preheated 350-degree F oven for about 10 to 12 minutes or until golden brown. Allow to cool a few moments before serving. Store the cookies in an airtight container.
