Tasty 20-Minute Tortellini Recipe With Tomato Cream Sauce Made My Whole Family Happy

I have three obstacles when it comes to making dinner for my family:

  1. I don’t particularly like to cook.
  2. We have two picky eaters (myself and my older son).
  3. Two of us are carnivores and two of us are CARBivores.

As a result, it’s tricky finding a recipe that I don’t mind cooking, that I make well and that makes everyone happy. We sometimes have success with pasta recipes. When we find one we love, I like to share it so that other families with similar challenges can capitalize on our success! I found this tortellini recipe with tomato cream sauce on 30Seconds.com and it was as easy and delicious (and pretty!) as it looked. The proof is in the pictures! I hope it works as well for your family as it did for mine.

The 20-minute recipe calls for tortellini, which I used, but you can substitute cheese ravioli. Also, we didn’t need a full two packages of pasta, so I used less which made the sauce (which is SO good) go farther.

Ingredients

 2 packages fresh tortellini, cooked according to package directions
• 1 tablespoon  olive oil
• 1 onion, chopped
• 3 - 4 cloves garlic, minced
• 1 can (14.5 ounces)  diced tomatoes, undrained
• 1 tablespoon  dried basil
• 1/2 teaspoon  dried oregano
• 1/2 cup heavy cream
• chopped parsley, for garnish (We skipped this because my kids don’t care how things look!)

Here's how to make it:

1. Heat the olive oil in a skillet. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds.
2. Add the tomatoes, basil and oregano. Season with salt and pepper. Bring to a simmer and cook about 5 minutes.
3. Pour in the cream and cook about 5 minutes more. Add more salt and pepper, if needed.
4. Ladle the sauce over the cooked pasta. Serve with freshly grated Parmesan cheese, if desired.
