Whether it's piled on top of crisp lettuce, on sandwich bread or served with crackers or potato chips, chicken salad is on of my favorite things. A local deli has the most amazing Cajun chicken salad. After craving it one too many times at home, this chicken salad recipe was born.

This creamy Cajun chicken salad recipe is hard to beat if you like just a little spice in your food. To make this homemade chicken salad recipe you will need cooked chicken that's finely chopped, mayonnaise, Cajun seasoning, hardboiled eggs, green onions and red onion.

Different brands of Cajun seasonings have different spice levels. Find one that you enjoy, and adjust the amount to suit your tastes. Serve this easy, creamy, spicy Cajun chicken salad recipe over lettuce, piled onto your favorite bread, with crackers or as a wrap. It's definitely chicken salad with some attitude!

Ingredients

3 cups finely chopped cooked chicken
1/3 - 1/2 cup mayonnaise
1 - 2 teaspoons Cajun seasoning (or to taste)
2 hardboiled eggs, chopped
3 - 4 chopped green onions
1/4 cup finely chopped red onion (optional)

I use Slap Your Mama or Tony Chachere's seasoning, but choose one with the spice level your enjoy.

Stir in any other ingredients you enjoy in chicken salad.

If you don't have leftover chicken, you can use a rotisserie chicken (here's how to make a rotisserie chicken in the slow cooker) or cook a couple boneless chicken breasts and shred.

Store the chicken salad in an airtight container in the fridge for up to three days.
