Ingredients
- 1 refrigerated pie crust of your favorite pie crust recipe
- 4 tablespoons cornstarch
- 3/4 cup sugar
- 4 tablespoons butter, melted
- 2 1/4 cups heavy whipping cream
- 1 tablespoon vanilla
Topping
- 4 tablespoons butter, melted
- 1/2 cup cinnamon sugar
Here's how to make it:
- Put the pie crust into a pie plate. Prick the bottom all over with a fork. Bake in a preheated 325 degree F oven for about 10 minutes or until almost cooked.
- Combine the cornstarch and sugar in a bowl. Whisk to combine.
- In a saucepan, melt the butter. Add the cornstarch mixture and whipping cream. Cook over medium heat, stirring constantly, until it thickens, about 3 to 4 minutes. Turn off the heat and add the vanilla.
- Pour the filling into the partially cooked pie shell.
- Pour the melted butter over the pie filling and then sprinkle with the cinnamon sugar.
- Bake for about 25 minutes, then broil for about 1 minute to brown the top. Remove from the oven and cool before refrigerating until completely chilled.
