Cheat Day Cabbage Recipe: A Hot Buttered Cabbage Recipe Worth Gaining a Pound For by Donna John

Growing up, my mom cooked "fried" cabbage with about a pound of bacon in it. Southern fried cabbage, which is absolutely delicious. One night I decided to experiment and create a cabbage recipe with no bacon. This hot buttered cabbage recipe tastes incredible. Healthy? Not so much. But that's why it's called cheat day cabbage.

Ingredients
- 1 head cabbage, cored and chopped
- butter
- hot sauce (I use Tabasco sauce or Crystal hot sauce)
Here's how to make it:
- Put the cabbage into a large pot with about 1 cup of water. Season liberally with salt and pepper. Cook, stirring often, until cabbage is very soft, about 30 to 40 minutes. Add water, as needed, to keep it moist while cooking. Don't add too much because you want the water to cook out.
- Add the butter. Lots of butter. For smaller heads of cabbage start with 4 tablespoons. Larger heads can handle a whole stick. (This is cheat night, remember?)
- Add the hot sauce. Tabasco sauce is hotter than Crystal sauce, so I use less when using Tabasco. Be generous. You want to taste it.
- Continue to cook a few more minutes to combine the flavors. Taste and add more butter, hot sauce, salt and pepper, if needed. (Cabbage needs a lot of salt and pepper.)
