One-Pot Goulash Soup Recipe Is On the Table in 20 Minutes

Goulash made with macaroni noodles is as American as apple pie. (We're not talking Hungarian goulash.) This easy goulash soup recipe is a flavorful, filling and comforting lunch or dinner, especially in the cooler fall and winter months. Another bonus is that it's ready in about 20 minutes!

To make this stick-to-your-ribs, delicious goulash soup recipe you will need ground beef, onion, garlic, beef broth, diced canned tomatoes, tomato sauce, tomato paste, Worcestershire sauce, paprika and elbow macaroni pasta. The soup cooks in one pot (yet another bonus!) on the stovetop in no time.

Ladle some of this hearty ground beef and pasta soup into a bowl, turn off the news, sit back and unwind for a while. You deserve it.

Recipe Notes

  • You could use ground turkey instead of ground beef.
  • Any short pasta could be substituted for the elbow macaroni. Use gluten-free pasta to make this recipe gluten-free.

Here's how to make it:

  1. Brown the ground beef and onion in a large soup pot until cooked through, about 5 to 8 minutes. Add the garlic and cook 30 seconds.
  2. Add the remaining ingredients except elbow macaroni. Season with salt and pepper. Bring to a boil.
  3. Pour in the elbow macaroni. Reduce heat and simmer gently until macaroni is tender, about 10 minutes. Taste and add more salt and pepper, if needed.

Ultimate comfort food!

What a simple, comfort food recipe, that's easy to customize, if desired - perhaps by adding some frozen mixed vegetables. With wildly fluctuating temperatures - 45Β°F one day, and 70 the next (though ALL the nights are low 30s - mid 40s), this soup is just what the doctor ordered! And...Welcome to October, in Alberta, Canada πŸ‡¨πŸ‡¦ 🀣

Totally agree, Terry . Same thing is happening here in Chicago. This recipe is exactly what we need this time of year, ha! Enjoy.
