Boursin is a creamy herb cheese spread that's a blend of garlic, parsley and chives folded into Gournay cheese. According to the Boursin website, Boursin cheese was created by François Boursin, a young French cheesemaker. He worked for two years on his recipe inspired by fromage frais, a traditional French cheese dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. In 1963, François introduced this mouth-watering cheese to the world and it's since become famous. If you've not yet tried Boursin as an ingredient, consider this an easy opportunity to do so!

Ingredients
- 1 pound skinless/boneless chicken breasts, cut into small chunks
- 1 pound skinless/boneless chicken thighs, cut into small chunks
- 4 tablespoons olive oil
- 1 teaspoon chopped garlic
- 5.2 ounces (1 box) Boursin garlic and herb cheese
- 1 medium head cauliflower, chopped
- 1 - 2 broccoli crowns, chopped
- 1 teaspoon Mediterranean spices (I used Weber)
- 1 cup shredded cheddar cheese
Here’s how to make it:
- Preheat oven to 350 degrees F. In a large bowl, add the broccoli, cauliflower, salt, pepper, Mediterranean spices and 2 tablespoons of the olive oil. Toss everything to combine, ensuring vegetables are coated with the mixture. You could use all cauliflower or all broccoli, if desired.
- Spoon vegetables into an 13x9-inch baking pan or casserole dish that’s been sprayed with nonstick cooking spray. Bake for about 15 minutes, until vegetables are crisp-tender.
- While vegetables are baking, in a large sauté pan, heat 2 tablespoons of the olive oil over medium heat. Add the chicken and stir. Simmer until cooked through, about 10 minutes. Add the Boursin cheese and garlic to the pan, and stir until melted to combine. You could use all breasts or all thighs, if desired.
- Remove vegetables from oven and add chicken mixture on top of the cauliflower and broccoli mixture, making sure to drizzle all the creamy juices from the pan.
- Top the casserole with the shredded cheddar cheese.
- Cover the casserole tightly with foil and bake for 15 to 20 minutes, or until cheese is melted.
- Serve over rice, pasta or potatoes. Top with additional shredded cheese, if desired. Store any leftovers in an airtight container in the fridge.
