You're thinking about it, aren't you? Breakfast for dinner? Why not? This easy creamed spinach recipe with eggs is simple to make and ready in about 20 minutes.
The breakfast, brunch or dinner recipe is simply onion, spinach, cream, eggs and Parmesan cheese. You could add a sprinkling of crushed red pepper flakes for a little heat. Here is your short shopping list: olive oil, onion, fresh spinach, heavy whipping cream, eggs and Parmesan cheese.
Not only is this recipe quick, easy and inexpensive, but you get the health benefits of spinach, the health benefits of eggs and the health benefits of onion. The egg dish is also high in protein.
Serve this skillet spinach and egg recipe with crisp bacon, breakfast sausage and biscuits. If you don't like fried eggs, top the creamy spinach with scrambled eggs or even vegan eggs.

Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 20 ounces (2 bags) fresh spinach
- 1/2 cup heavy whipping cream
- 6 - 8 eggs
- 1/3 cup freshly grated Parmesan cheese
Here's how to make it:
- In an ovenproof pan or cast iron skillet heat the olive oil. Add the onion and cook until soft, about 3 minutes.
- Add half of the spinach and stir until wilted, about 2 minutes. Add the remaining spinach and cook until wilted, about 2 more minutes. Season with salt and pepper. ((You could use thawed frozen spinach that's been squeezed dry.)
- Pour in the heavy cream and cook until it begins to thicken, about 2 minutes. (For some spice, add crushed red pepper flakes.)
- Using a spoon, make a well in the spinach to hold each egg. Crack the eggs into each hole. Sprinkle with the Parmesan cheese. (Alternately, you could spoon the spinach mixture into ramekins before topping each with an egg or two for individual servings, as pictured.)
- Put the skillet into a preheated 400-degree F oven until eggs are set, about 6 to 8 minutes. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
