Serve this easy asparagus soup recipe with toasted baguette slices or homemade croutons on top. This is a grandma-approved recipe that's full of old-fashioned goodness for lunch or dinner!

  • 1 1/2 pounds asparagus, trimmed and cut into 1/2-inch pieces
  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth or vegetable broth
  • 1 teaspoon lemon juice
  • 3/4 cup heavy whipping cream
  • olive oil and chopped fresh herbs, for garnish

Here's how to make it:

  1. Melt the butter in a soup pot. Cook the onion until soft, about 4 minutes. Add the garlic and cook 30 seconds.
  2. Add the asparagus and cook about 5 minutes.
  3. Pour in the broth and lemon juice. Season with salt and pepper. Simmer for about 10 minutes or until asparagus are soft.
  4. Use an immersion blender and puree in the pot or pour the soup into a blender, blend until smooth and return to pot.
  5. Add the cream and heat through. Do not boil. Taste and add more salt and pepper, if needed. Garnish with a drizzle of olive oil and chopped fresh herbs.
