Ham Risotto Recipe (Risi e Bisi): A Simple Italian Risotto Recipe

Risi e bisi is an Italian rice dish similar to risotto. This easy risi e bisi recipe uses rice, peas and ham, so it's a creative way to use leftover ham after a holiday or big family meal. So savory, so easy and so delicious!

The risotto is made with stock, onion, garlic, leftover ham, Arborio rice, peas and freshly grated Parmesan cheese. Be sure to use Arborio rice for this recipe, not long-grain rice. Serve this risi e bisi recipe as a side dish or a main dish with a salad (or not).
