Everyone loves pancakes! Surprise your sweethearts with this healthy beet pancake recipe on Valentine's Day. The recipe is from the cookbook Pancakes Make People Happy by Sharon Collins, Charlotte Collins and Courtney Wade. The pink pancakes are made with beets, so you'll be giving your loved ones the health benefits of beets as they enjoy them for breakfast.
To make these pink heart beet pancakes you will need nine ingredients plus a little cooking oil for the pan. Here is your shopping list: a fresh beet, milk, an egg, butter, vanilla extract, maple syrup, flour (either all-purpose or gluten-free), baking powder and salt. The beet is boiled until tender, then put into a blender with the other ingredients and blended up just smooth. Ladle the batter into a hot skillet or griddle and cook.
Serve these beet pancakes that are shaped like a heart for Valentine's Day. Don't have a heart cookie cutter? Serve them round for breakfast or brunch any day of the week! The sweet pancakes would even be fun for dessert dolloped with whipped cream and sprinkled with chocolate chips.

Ingredients
- 1 medium to large beet, peeled, cut into chunks and boiled until tender
- 1 cup milk
- 1 large egg
- 1 tablespoon butter, melted
- 1/2 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1 cup flour (all-purpose flour or gluten-free flour)
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- cooking oil, for greasing the pan
Optional Toppings
- whipped cream
- strawberries
- chocolate chips
Here's how to make it:
- In a blender, puree beet with milk until smooth. Add egg, butter, vanilla extract and maple syrup. Blend to combine. Add flour, baking powder and salt to the mixture. Pulse to combine (try not to over blend).
- Heat a griddle over medium heat and grease with oil or butter. Pour 1/3 cup of the batter into your heart mold or onto the griddle. If you don't have a heart mold, simply ladle in the batter like regular pancakes. Cook for 2 to 3 minutes, until small bubbles start to form on the top and the edges firm up.
- Remove heart mold carefully before flipping or flip the regular pancakes and cook for another 1 to 2 minutes, or until the pancakes are cooked through. If using the mold, don’t worry if it doesn’t come off perfect, you can use a spatula or knife to trim the edges a bit.
- Repeat for the remaining batter. Serve hot with desired toppings.
