Cranberry-Glazed Pork Loin Recipe: Who Says Turkey Should Have All the Fun on Thanksgiving?

Tangy, sweet and with a hint of mustard, this easy cranberry-glazed pork loin recipe is a good choice for a dinner party, busy weeknight or even as a substitute for a big turkey on Thanksgiving. Serve with your favorite side dishes.

You'll need:

Here's how to make it: 

  1. In a small pot, combine the cranberry juice, cranberry sauce and mustard. Cook, stirring occasionally, until thick, about 10 minutes. 
  2. Season the pork loin with salt and pepper, to taste. Put it into a baking dish and drizzle with olive oil. Bake in a preheated 425-degree F oven for about 25 minutes, brushing often with the cranberry mixture, until it reaches 145 degrees F on a meat thermometer. Allow to rest 5 minutes before slicing.
