Easy Roasted Beets Recipe: This Healthy Vegetable Recipe May Help You Beet Some Health Issues

This easy roasted beets recipe can be eaten warm or cold, as a side dish or in a salad. According to vegan lifestyle expert Nafsika Antypas, beets are healthy and assist in reducing inflammation, contain anti-cancer properties, help regulate cholesterol, increase heart health and are loaded with vitamins and minerals.

You'll need:

  • 6 beets, washed, ends trimmed, peeled and cut into large chunks
  • 1 tablespoon olive oil
  • fresh chopped herbs (optional)

Here's how to make them:

  1. Put the beets into a baking dish. Drizzle with the olive oil and season with salt and pepper. Add herbs, if using. Toss to coat. 
  2. Cover with the lid or aluminum foil. Bake in a preheated 375-degree F oven for about 1 hour or until tender. Serve warm or cold.
