Last night I was pressed for time. Really, really pressed for time, but needed to throw something together that had some nutritional value for my daughters for dinner. After a quick trip to the grocery store for a few ingredients, this creamy chicken fettuccine alfredo recipe with vegetables materialized. The Italian-inspired dinner was a hit! This chicken alfredo recipe is a great alternative to those recipes from scratch when you are in a hurry.
To make this budget-friendly recipe you only need 10 simple ingredients. Here is your short shopping list for this high-protein recipe: boneless/skinless chicken breasts, chicken broth, a jar of alfredo sauce, fresh broccoli florets, celery, carrots, onion, poultry seasoning, garlic powder and fettuccine (or your favorite pasta).
Serve the creamy chicken and pasta blanketed in alfredo sauce as a high-protein dinner with your favorite side dishes. We like some garlic bread or a simple salad on the side.

Ingredients
- 3 - 4 thin boneless/skinless chicken breasts
- 14 ounces (1 can) low-sodium chicken broth
- 23 ounces (1 jar) alfredo sauce
- 1 head broccoli, cut into florets
- 2 ribs celery, sliced
- 4 large carrots, cut into bite-sized pieces
- 1 large yellow onion, chopped
- poultry seasoning, to taste
- garlic powder, to taste
- 12 - 16 ounces fettuccine noodles, cooked according to package directions (or your favorite pasta)
Here's how to make it:
- Bake the chicken breasts in a 375-degree F oven for about 20 minutes, or until cooked through. (You could use boneless, skinless chicken thighs.)
- While chicken bakes, boil or steam the broccoli and carrots and sauté the onions and celery until softened.
- Pour the sauce and chicken stock into a large pot. Add the cooked vegetables.
- Cut the chicken into cubes and add it to the pot. Season with the poultry seasoning, garlic powder, salt and pepper. (Add as much or little seasonings to your taste.)
- Add the noodles last. Stir to combine and heat through. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
