Baby bok choy may be small, but it's big in flavor. Bok choy, which is a type of Chinese cabbage, is a vegetable that is often overlooked as a dinner side dish. Not only is bok choy easy to cook, but it tastes amazing and bok choy has many health benefits.
To make this Asian-inspired sauteed bok choy recipe you will need just five ingredients (plus some water). An optional ingredient is the sesame seeds used to garnish. We suggest you don't skip the oil-rich sesame seeds, which contain lots of fiber, iron, calcium, protein, copper, magnesium and phosphorus (to name just a few health benefits of sesame seeds).
Here is your short shopping list for this vegetable side dish: baby bok choy, cooking oil, fresh garlic, fresh ginger (ginger has health benefits, too), low-sodium soy sauce and water. The bok choy cooks up in about five minutes!
Serve the bok choy as a side dish with your favorite dinners.

Ingredients
- 6 heads baby bok choy, washed and cut in half lengthwise
- 2 teaspoons cooking oil
- 2 cloves garlic, minced
- 2 teaspoons fresh minced ginger
- 1 tablespoon low-sodium soy sauce
- 2 tablespoons water

Recipe Notes
- You can use olive oil for this recipe, but we prefer a neutral oil like vegetable, canola or avocado oil.
- If you can't find baby bok choy, chop up regular bok choy.
Here's how to make it:
- Heat the oil in a wok or skillet over medium-high heat. Add the garlic and ginger. Cook, stirring, about 30 seconds.
- Add the bok choy, soy sauce and water. Cover and cook about 2 to 3 minutes. Uncover and cook about 2 minutes more, or until the liquid has evaporated.
- Season with a little black pepper and sprinkle with sesame seeds, if desired. Serve.
