Quick Mushroom Rice Recipe: 5-Ingredient Mushroom Garlic Rice Recipe Is Rice Done Right by Gwen Johnson

Growing up, we ate those rice box mixes all the time. Nothing wrong with them, really, but when making a flavored rice from scratch is so easy, why not do it? This mushroom rice recipe is ready in about half an hour and is packed with flavor, so it may be time to finally surrender the box mix for good.

Ingredients
- 2 teaspoons olive oil
- 1 cup chopped mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth or vegetable broth
- 1 cup long-grain rice
- chopped, fresh parsley (optional)
Here's how to make it:
- Heat the olive oil in a skillet. Add the mushrooms and onion and cook until softened, about 5 minutes. Add garlic and cook an additional minute. Season with salt and pepper, to taste.
- Add the broth and rice and bring to a boil. Reduce heat to low, cover and simmer about 20 minutes or until rice is tender. Stir in parsley and serve.
