We just can't get enough peanut butter chocolate recipes. If you feel the same way, then here's your new favorite dessert recipe. This shortcut peanut butter brownies recipe with chocolate ganache is pure bliss! The decadent dessert tastes like if a brownie and peanut butter cup had a baby. OMG! And, because it's a shortcut recipe, it's very easy to make.
Along with being the ultimate peanut butter cup fan, my husband is also a brownie connoisseur. Imagine his delight to see two of his favorite things become one. The man just about lost his mind over these moist and fudgy brownies. He doesn't need to know that this high-protein brownie recipe starts with a box of brownie mix (a.k.a. the shortcut). Because of the peanut butter (check out the health benefits of peanut butter) and chocolate ganache topping (check out the health benefits of dark chocolate), these brownies taste more like something you'd buy in a bakery. I. Am. Not. Kidding. But better than the bakery because you can easily make them any time you have a chocolate peanut butter craving – day or night. Plus, check out the health benefits of protein.
To make this delicious high-protein brownies recipe, here are the simple ingredients you'll need to gather: a box of brownie mix (and the ingredients to make them), peanut butter, chocolate chips and coconut oil. The flaky sea salt is optional. First, make the brownies and let them cool. Next, spread the peanut butter over the cooled brownies. Then, melt the chocolate and coconut oil and spread it over the peanut butter. Sprinkle some flaky sea salt on top, if you like. Pop the brownies into the fridge until the chocolate sets, then slice and serve. Try not to lose your mind over the chocolate peanut butter decadence.
Serve these blissful peanut butter brownies with chocolate ganache for dessert on a special occasion, or anytime just because. They can be a sweet snack with a glass of milk, cup of coffee or mug of hot tea. If you want to go crazy, top them with some whipped cream. Oh, my!
Cuisine: American
Prep Time: 15 minutes, plus cooling time
Cook Time: 25 to 30 minutes (ovens vary)
Total Time: 40 to 45 minutes, plus cooling time
Servings: 12
Ingredients
- 15 - 17 ounces (1 box) brownie mix (I like King Arthur brand), and the ingredients to make them
- 1 1/2 cups peanut butter (crunchy or creamy)
- 2 cups chocolate chips (semisweet or dark chocolate)
- 2 teaspoons coconut oil
- flaky sea salt sprinkle (optional topping)
Here's how to make it:
- Prepare the brownie mix according to package directions and spread into a baking pan.
- Bake according to package directions. Set aside and allow to cool. (To make these brownies gluten-free, use gluten-free brownie mix.)
- After brownies have cooled, spread the peanut butter over the brownies, ensuring that it's evenly distributed. (I used crunchy peanut butter, but you could use creamy if preferred.)
- In a medium microwave-safe mixing bowl, add the chocolate chips and coconut oil. Microwave the mixture for 30 seconds, then remove and stir. Microwave for another 30 seconds, then remove and stir again. The chocolate should be nearly melted by now, and you can keep stirring until all chips melt completely. Because microwaves vary, you may need additional microwaving time. Just be sure not to cook it too long because the chocolate will continue to melt after you remove it from the microwave. (You can use dark chocolate or semisweet chocolate chips.)
- Spread the melted chocolate over the peanut butter.
- Ensure that the chocolate is evenly distributed. It should cover the top and the sides.
- Sprinkle with flaky sea salt, if using.
- Put into the refrigerator until set, about 1 hour.
- Remove from fridge and slice into brownies. (The number of brownies depends upon the size of your slices. I cut 12 brownies.)
- Serve brownies on their own or with whipped cream topping. Store leftovers in an airtight container in the refrigerator.
