Creamy Jalapeno One-Pan Chicken Recipe Is An Ultra-Satisfying High-Protein Dinner by 30Seconds Food

To make this high-protein recipe you will need the following gluten-free ingredients: boneless/skinless chicken breasts, ground cumin, dried oregano, cooking oil (avocado oil or olive oil), onion, fresh garlic, jalapeno peppers, chicken broth, cream cheese, Mexican cheese blend and optional fresh cilantro. "Did you know that a majority of the heat from peppers is actually found in the seeds?" says Rachel. "So, if you remove the jalapeno seeds then you’ll tame down the heat a good bit, leaving the flavor."

Ingredients
- 4 boneless/skinless chicken breasts
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 2 tablespoons avocado oil or olive oil (divided)
- 1 large onion, diced
- 4 fresh garlic cloves, pressed
- 2 jalapeno peppers, finely chopped
- 1 cup chicken bone broth
- 4 ounces organic cream cheese, at room temperature
- 1/2 cup shredded Mexican cheese blend
- handful of fresh cilantro, chopped, for garnish (optional)
- lime wedges, to serve (optional)
- sliced jalapeno, to serve (optional)
Here's how to make it:
- Gently pound the thickest part of your chicken breasts to an even thickness using a mallet. Pat chicken dry using a paper towel. Sprinkle your chicken with sea salt, pepper, cumin and oregano. Drizzle with half of the oil and rub on all sides.
- Heat the remaining tablespoon of oil in a preheated skillet over medium-high and cook the chicken until golden brown and just cooked through. Time varies depending on the thickness of your breasts, but usually 4 to 6 minutes on each side. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.) Set your cooked chicken aside on a plate.
- Sauté the onion, garlic and jalapeno for 2 to 3 minutes.
- Stir in the broth and allow it to simmer until reduced by half.
- Add the cream cheese and whisk until incorporated and smooth.
- Reduce the heat to a very low and return the chicken to the skillet. Spoon your creamy sauce over your chicken. Sprinkle with the cheese and allow the sauce to bubble for a few minutes until the cheese is melted and the chicken is hot. Serve hot, garnished with fresh cilantro and lime wedges. Store any leftovers in an airtight container in the fridge.
