This chocolate banana bark recipe is almost like a healthier candy bar. My husband, whose favorite childhood sandwich was peanut butter banana and whose favorite candy bar is a Snickers®, freaked out when he tried it. "It's the perfect flavor combination," he mumbled in between bites. Plus, this high-protein recipe includes the health benefits of bananas and the health benefits of dark chocolate.
To make this nutritious no-bake chocolate bark recipe, here are the gluten-free ingredients you'll need to gather: bananas, peanut butter, chocolate chips and coconut oil. The honey and flaky sea salt are optional. You place the sliced bananas on a sheet of parchment paper, spread the peanut butter over the bananas, then smooth the melted chocolate over the peanut butter. If using honey, spread it over the peanut butter before adding the chocolate. If using flaky sea salt, sprinkle it over the chocolate layer. Pop it into the freezer until set, then slice and serve (and prepare to wow your family and friends).
These high-protein peanut butter banana squares are a decadent dessert that are as nutritious as they are delicious. Serve them as an energizing snack any time of day or grab one as you're running out the door in the morning – no guilt necessary!

Cook Time: 1 minute (microwaves vary)
Freeze Time: 1 hour
Total Time: 1 hour and 11 minutes

Ingredients
- 3 medium ripe bananas, sliced in rounds
- 1 1/2 cups peanut butter, softened (crunchy or creamy)
- 2 cups chocolate chips (dark or semisweet chocolate chips)
- 2 teaspoons coconut oil
- 2 tablespoons honey (optional)
- flaky sea salt (optional)
Here's how to make it:
- On your kitchen counter or on a large cutting board or on a 13x9-inch sheet pan, lay out a piece of parchment paper big enough to cover the bottom of a 13x9-inch baking pan. Line up the banana slices in three rows, close enough that they're touching. (I found it easier to lay the parchment paper onto a large cutting board after measuring it out so that I could easily transport the bark to the freezer.)
- Spread the softened peanut butter over the bananas, ensuring that it's evenly distributed. (I used crunchy peanut butter, but you could use creamy if preferred.)
- Spread the honey in lines over the top of the peanut butter, if using.
- In a medium microwave-safe mixing bowl, add the chocolate chips and coconut oil. Microwave the mixture for 30 seconds, then remove and stir. Microwave for another 30 seconds, then remove and stir again. The chocolate should be nearly melted by now, and you can keep stirring until all chips melt completely. Because microwaves vary, you may need additional microwaving time. Just be sure not to cook it too long because the chocolate will continue to melt after you remove it from the microwave. (You can use dark chocolate or semisweet chocolate chips.)
- Spread the melted chocolate over the peanut butter.
- Ensure that the chocolate is evenly distributed. It should cover the top and drip down the sides.
- Sprinkle with flaky sea salt, if using.
- Put into the freezer until set, about 1 hour.
- Remove from freezer.
- Slice and serve immediately. Store leftover bars in an airtight container in the freezer.
