How to Store Butter: Secrets for Delicious Dairy From a Pastry Chef!

I keep my butter in the freezer. Why? Because it’s a fat, it will break down quicker, not to mention absorb off flavors from your fridge. Frozen butter is easily grated. Why grate butter?

  • It's a perfect application for adding to dry ingredients before baking biscuits, scones, muffins, and pie dough. 
  • Grating allows the butter to distribute throughout your formula better, resulting in a flakier end products.
  • Grating also makes the butter melt much quicker, so if your butter it’s is too cold to spread, consider grating it first and then topping toast, veggies or a steaming hot delicious baked potato!
