To make this high-protein, Mexican-inspired chicken dinner you will need to grab the following ingredients from your fridge and pantry: boneless/skinless chicken breast, olive oil, chili powder, ground cumin, garlic powder, dried oregano, seasoned salt, black pepper, a can of tomatoes with green chiles, an onion, a red bell pepper, a green bell pepper (check out the health benefits of peppers) and fresh cilantro. Ingredients
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 - 1/2 teaspoon seasoned salt
- black pepper, to taste
- 10 ounces (1 can) tomatoes with green chiles (Rotel)
- 1 pound boneless/skinless chicken breast, cut into strips
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup fresh chopped cilantro
Here's how to make it:
- Combine the oil, chili powder, cumin, garlic powder, oregano, seasoned salt, pepper and can of tomatoes with green chiles in a bowl. Mix well.
- Add the chicken, onion, peppers and cilantro. (You can use all red or all green peppers, or a variety of colors.) Stir. Pour into a baking pan or onto a baking sheet. (You can cover the pan with aluminum foil for easier cleanup.)
- Bake in a preheated 400-degree oven for about 25 minutes, or until chicken is cooked through. Serve with tortillas and desired toppings. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
