Baked Apple-Glazed Chicken Recipe: The Best Chicken Dinner for Cold Months

This apple-glazed chicken recipe is OMG good. Fruit pairs so well with poultry and pork. In this one-pot chicken recipe, apples, garlic and onions team up with chicken to create an easy, hearty meal. The apple jelly glaze is optional, but adds even more sweetness and makes this low-sodium chicken shine.

To make this easy, gluten-free baked chicken recipe you will need bone-in chicken thighs or legs (or your favorite pieces!), fresh apples, onion, garlic, white wine or chicken broth, apple cider, fresh thyme or rosemary and apple jelly.

Serve this easy dinner with your favorite side dishes. Whipped sweet potatoes or butternut squash would be delicious with it.

Ingredients

  • 6 - 8 bone-in chicken drumsticks or thighs
  • 2 apples, cut in wedges
  • 1 onion, cut into wedges
  • 3 cloves garlic, chopped
  • 1/2 cup white wine or chicken broth
  • 1 cup apple cider
  • fresh thyme or rosemary, chopped
  • apple jelly (optional)

  • You could use boneless chicken for this recipe, just reduce the cooking time.
  • For even more flavor, sprinkle with a little ground cinnamon and nutmeg.

Here’s how to make it:

  1. Season the chicken with salt and pepper, to taste. Put the chicken in an ovenproof skillet or baking pan (cast iron works well). Top with the apples, onions and garlic. 
  2. Pour the wine or chicken broth and apple cider over the top. Sprinkle with chopped thyme and/or rosemary.
  3. Bake in a preheated 375-degree oven about 40 to 45 minutes, or until chicken is cooked through. If desired, brush the chicken with a little apple jelly during the last 20 minutes of baking.

I've done something similar with pork loin but this sounds even better! (I think I would be tempted to try that white wine jelly in this ;) And I would personally add sweet potatoes and fresh green beans to the mix. Good thing I just got my new, bigger pot!

I make a recipe similar to this but never thought of using apple jelly to glaze. That would not only make it sweeter, but help it get caramelized and crispy. Appreciate the new technique.
