Easy Pineapple Upside-Down Cake Recipe Starts With a Box Cake Mix

Pineapple upside-down cake is a classic. Growing up, my mom baked the boxed pineapple upside-down cake mix that came with all the ingredients inside. This easy pineapple cake recipe is similar to that ready made one, but you'll have to get the ingredients from your own pantry. This moist cake is super simple to make! Turn your family's world upside-down by surprising them with one tonight.

To make this pineapple upside-down cake recipe you will need a box of yellow cake mix plus ingredients to make it, butter brown sugar, a can of pineapple slices and maraschino cherries. The cake has extra pineapple flavor because you substitute the water called for in the cake mix with the pineapple juice from the can of pineapple. Genius!

Serve this moist pineapple cake for dessert with a cup of coffee or glass of ice cold milk.

  • Store the cake overed in an airtight container in the fridge.
  • If you don't like maraschino cherries, omit them. 

Here's how to make it:

  1. Pour melted butter into a 13x9-inch baking pan. Sprinkle with the brown sugar. Arrange pineapple slices over the brown sugar, placing a cherry in the center of each. 
  2. Mix the cake according to package directions, but substitute the reserved pineapple juice for the water (add water to the pineapple juice, if needed). Bake in a preheated 350-degree F oven for 42 to 45 minutes, or until a toothpick comes out clean.
  3. Remove from oven and immediately invert onto a serving platter. Let it sit with the pan still over it for about 5 minutes. Remove pan.

I use fresh pineapples for this recipe or can pineapples like from Libby's or Dole what's the best to use and do you use cherries you know maraschino cherries or and do you mix it with the flowers is it a loose base I appreciate some info because sometimes some come out real gooey and some comes up you know do you want it like a cupcake or a cake or a shortbread appreciate your your insight thanks
