Servings: Makes 4 4-ounce bottles
Ingredients
- 2 cups balsamic vinegar
- 1 cup water
- 1/2 cup sugar
- 2/3 cup cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Here’s how you make it:
- Reduce the vinegar by half (from 2 cups to 1 cup). Stir often over low heat for approximately 20 minutes. The vinegar will thicken and coat the pan. Set aside to cool once reduced.
- Dissolve sugar and salt in the water. Bring to a boil in a small saucepan. Reduce the heat to low and add cocoa, stirring until syrup begins to thicken. Remove from heat and add vanilla. Set aside to cool.
- Once completely cool, mix the vinegar and chocolate syrup together thoroughly.
Chocolate balsamic vinegar can be divided into bottles for gifts, served over fruit (strawberries and pineapples are a fave!), poured over ice cream or drizzled over a salad. You won't regret it!
