This Superfood Parfait Recipe Is Like a High-Protein Breakfast With a Friend (6 Ingredients, 5 Minutes) by Donna John
For my birthday this year, I got to spend time with my dear friend Elisa. Not being a big breakfast person, it surprised me that the most important meal of the day became my favorite. Where we stayed had a amazing superfood parfait on the menu – and I was obsessed. Now that I've recreated this healthy, high-protein recipe at home, it feels like I'm having breakfast with Elisa when we are now miles apart.

This superfood yogurt parfait recipe is made entirely of healthy, wholesome ingredients. The nutrition from this breakfast or snack recipe is off the charts. Check out the health benefits of Greek yogurt (yogurt is one of the best foods to eat during menopause), the health benefits of nuts, the health benefits of pepitas (pumpkin seeds), the health benefits of honey and the health benefits of berries. If you add the optional chia seeds and flax seeds, you up the nutritional value even more.
You can use homemade granola or your favorite store-bought granola. Depending on which kind you use, you may not need to add extra nuts. I added pecans and slivered almonds because I decided to try a granola with quinoa, and it was light on the nuts. And yes, quinoa has health benefits, too. I also used vanilla honey for even more flavor.
Pro Tip: If you don't have time to make your parfait in a bowl and need to grab and go, make a smaller version directly in the plastic yogurt cup.
This creamy Greek yogurt, granola and fruit parfait will be a staple at my house now for breakfast, as a high-protein and high-fiber snack and even as a healthy dessert after dinner.
While my friend is not sitting beside me, she is in my heart with every bite. Breakfast with Elisa is now one of my favorite healthy habits.

Ingredients
- 5.3 ounces (1 small container) plain Greek yogurt
- 2 tablespoons granola (store-bought or homemade)
- 1 tablespoon nuts (pecans, almonds, cashews, hazelnuts, etc.)
- 1 tablespoon pepitas
- 1 teaspoon honey
- 1/4 - 1/2 cup berries (blueberries, blackberries, strawberries, raspberries)
Optional Ingredients
- chia seeds, to taste
- flax seeds, to taste
Here's how to make it:
- Spread the Greek yogurt onto the bottom of a bowl. (I used a cereal-size bowl.)
- Top with the granola, nuts and seeds.
- Drizzle with the honey.
- Top with the berries. (I like to drizzle a little extra honey over the berries. You could use any fruit you like in place of the berries.)
- Enjoy!
- You could make these ahead of time and pop them in the fridge for a grab-and-go breakfast or snack. Adjust the amounts in this recipe to suit your tastes.
