When someone rolls their eyes about eating a salad, my first thought is that they have never had a good salad. The freshest ingredients and a delicious salad dressing are essential. While there are some really good store-bought salad dressings out there, homemade salad dressing and vinaigrettes are always the best. Alex Guarnaschelli's 3-2-1-1 vinaigrette recipe is now my favorite way to dress a salad. The homemade vinaigrette is quick, easy, simple and bursts with flavor that coats every leaf and vegetable in that salad bowl – and it's ready in about 90 seconds.
This foolproof vinaigrette recipe only requires you grab four gluten-free ingredients from your fridge and pantry. Here's what you'll need to shake up a batch of this creamy vinaigrette for dinner tonight: olive oil, red wine vinegar, Dijon mustard and black pepper. Alex does not put salt in her salad dressing. The Iron Chef suggests waiting and adding it fresh to the salad when serving.
Not only is this salad dressing easy and incredibly delicious, but it has health benefits, too. Read about the health benefits of olive oil, the health benefits of red wine vinegar, the health benefits of mustard and the health benefits of black pepper.
This celebrity chef recipe makes enough for two to three individual side salads or one large bowl of salad. You could double or triple the recipe, but it is so easy to make (remember, 90 seconds) that a fresh batch is simple to make at the last minute. Drizzle the oil and vinegar-based vinaigrette over lettuce salads, grain salads or even pasta salads.
