Our family absolutely loves broccoli. It just may be our favorite vegetable. For me, it goes back to childhood. I would always get excited whenever a certain friend of mine invited me over for dinner because her mom always made broccoli. I think she knew how much I loved it, or maybe she loved it just as much. It was a running joke that if my friend couldn't finish her broccoli, she'd give it to me and I'd happily finish it for her!

The flavorful broccoli recipe is so simple and quick to make. Here are the four gluten-free ingredients you'll need to make this tasty vegetarian recipe: fresh broccoli, extra virgin olive oil, fresh lemon juice and fresh ginger. The garlic powder and balsamic glaze are optional. The broccoli is tossed in the lemon and ginger mixture then baked in the oven until crisp-tender. You can garnish with a drizzle of balsamic glaze before serving, if you like.
This zesty baked broccoli recipe is ideal to serve as a nutritious side dish with just about any protein for dinner. I served it with this easy red pepper jelly chicken and it was so good!

Ingredients
- 3 cups fresh broccoli (about 2 medium heads), chopped
- 3 tablespoons extra virgin olive oil
- 3 tablespoons fresh lemon juice (or bottled lemon juice)
- 2 tablespoons fresh ginger, diced
- 1/2 teaspoon garlic powder (optional)
- salt and pepper, to taste, if desired (optional, but I used about a 1/4 teaspoon of each)
- balsamic glaze, for serving (optional)
Here's how to make it:
- In a 13x9-inch baking pan or casserole dish, add the olive oil, lemon juice and ginger. Add the garlic powder, salt and pepper, if using. Stir to combine. (Fresh lemon juice is best, but you also can use bottled lemon juice.)
- Add the broccoli and toss to thoroughly combine. Spread coated broccoli evenly in the baking pan.
- Bake in an oven that's been preheated to 425 degrees F until broccoli is browned and crisp-tender, about 15 to 20 minutes. You can stir broccoli halfway through baking time to ensure even roasting.
- Remove from oven and serve. Garnish with a drizzle of balsamic glaze, if desired.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave or oven.
