That describes this juicy baked chicken recipe to a tee. This easy red pepper jelly glazed chicken recipe has incredible flavor. And the zesty flavor comes from just four simple ingredients. Amazing!
My husband described the savory sauce in this chicken recipe as "downright addictive." It's so good that he literally licked the serving spoon. I give most of the credit to the slightly sweet and spicy kick of red pepper jelly. But then again, the Dijon mustard and honey also add to the mouth-watering flavor of this high-protein recipe (check out the health benefits of protein).
It's so easy to make this tangy delicious baked chicken dinner. You need only four gluten-free ingredients: boneless/skinless chicken breast or thighs, red pepper jelly, Dijon mustard and honey (check out the health benefits of honey). Simply mix together the sauce ingredients, pour the sauce over the chicken then bake until it's cooked through and bubbling. As an alternative to red pepper jelly, you can try different pepper jellies, such as habanero pepper jelly, jalapeño pepper jelly, etc.
Serve this moist and flavorful chicken for dinner any night of the week with your favorite vegetables or simple side dishes. I served it over rice to soak up the succulent sauce – the best!

Ingredients
- 2 pounds boneless/skinless chicken breast or thighs (or a combination)
- 1/2 cup red pepper jelly
- 1/2 cup Dijon mustard
- 1/2 cup honey
Here's how to make it:
- In a medium mixing bowl, add the jelly, mustard and honey. Whisk to combine.
- In a 13x9-inch baking pan or casserole dish, add the chicken. Pour the sauce over the chicken, ensuring the chicken is evenly covered in the sauce. (If you'd like to marinate the chicken first, cover and refrigerate for a couple of hours before baking. You can use boneless/skinless chicken breast or thighs, or a combination. Keep in mind that cooking time may be affected depending on which you use.)
- Bake in an oven that's been preheated to 350 degrees F until cooked through and bubbling, about 35 to 45 minutes. Remove chicken halfway during baking time to baste it with the sauce. Chicken is done when it measures 165 degrees F on a food thermometer.
- Serve immediately. This glazed chicken is delicious served over rice to soak up the savory sauce. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
