Ingredients
Sauce
- 1 cup apricot preserves
- 2 tablespoons low-sodium soy sauce
- 2 teaspoons Dijon mustard
- 3 cloves garlic, minced
- 1 tablespoon fresh minced or grated ginger
- crushed red pepper flakes, to taste
Chicken
- 3 pounds bone-in chicken pieces (thighs and legs work well)
- 1 tablespoon vegetable oil
- 1 onion, sliced
Here's how to make it:
- To make the sauce, combine all the ingredients in a bowl. Set aside.
- Put the sliced onions on the bottom of a slow cooker.
- Season the chicken with salt and pepper. Heat the oil in a skillet. Add the chicken and cook until browned on all sides, about 5 minutes on each side. Remove to the slow cooker. Pour the sauce over the chicken.
- Cover and cook on high for 3 to 4 hours or low for about 6 hours (internal temperature of 165 degrees F.)
