AI can turn a standard recipe into a “gluten-free” version in seconds, but just because the answer sounds convincing doesn't mean the conversion is actually right.

Converting a recipe to gluten-free isn't simply a case of taking out the wheat flour and replacing it with whatever gluten-free flour an AI happens to suggest. Gluten-free baking is a science of balance. The flour has to perform a particular function within the recipe, and changing it can affect everything from moisture and structure to how the finished bake holds together.

The problem is that AI-generated recipes can sound completely convincing while still being wrong. A response may provide precise measurements and confident instructions, while overlooking things a gluten-free baking expert would immediately consider – from unsuitable flour substitutions and incorrect ratios to hidden sources of gluten in other ingredients.

That's what makes AI-generated recipes potentially tricky for gluten-free bakers. An answer can look authoritative and give you very precise measurements, but that doesn't necessarily mean those measurements or substitutions have been tested in a real kitchen. With gluten-free baking, a confident-sounding answer isn't the same thing as a reliable one.

This doesn't mean bakers should avoid using AI altogether. Instead, they should treat it as a starting point and double-check every ingredient and substitution, particularly when cooking for someone with celiac disease or a medical need to avoid gluten.

AI can be a useful tool for inspiration, but I'd always encourage gluten-free bakers to question what it's suggesting rather than assuming the conversion has been properly formulated. Check every ingredient for gluten, look closely at the flour substitution and consider whether the recipe needs additional changes to achieve the same structure and texture.

And while a wheat-based recipe might tolerate a simple flour swap, gluten-free baking often requires a more considered approach. Gluten-free flour isn't just replacing one ingredient – it's replacing the job that gluten was doing in the original recipe. That's why a substitution that looks perfectly logical on paper can produce a completely different result in the oven.
