Ingredients

• 3/4 cup butter, softened
• 1 teaspoon vanilla extract
• 3/4 cup brown sugar, lightly packed
• 1 1/2 cups all-purpose flour or gluten-free flour
• 6 ounces dark chocolate or semisweet chocolate, chopped
• 1/2 - 3/4 cup chopped pecans (or hazelnuts, walnuts or almonds)

Here's how to make it: 

1. Use a stand or hand mixer to cream the butter, vanilla and brown sugar together.
2. Add the flour and mix on low until the dough forms. (You could add a pinch of salt, if desired.)
3. Spread the dough into an 8x8-inch baking pan (or similar size baking dish) that's been lined with parchment paper. Use clean hands to press the dough into the corners of the pan.
4. Bake in a preheated 350-degree F oven for 20 too 25 minutes, or until the shortbread is golden brown.
5. When the shortbread comes out of the oven, sprinkle the chocolate all over and use a rubber spatula to spread it over the top.
6. Sprinkle the pecans on top.
