The three-ingredient Scottish shortbread recipe reminded me of a cookie my grandma made. After digging through her recipe box, I found her recipe for Scottish shortbread cookies. She didn't make these as often as her cinnamon cookies, but these sweet, tender cookies are still a fond memory.
Because of the brown sugar in this cookie recipe, the cookies are darker in color than your typical shortbread cookie. This four-ingredient recipe is nothing fancy, but it doesn't have to be if grandma made it.

Ingredients
- 1 pound butter (4 sticks)
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 4 1/2 cups flour

- Roll the dough into balls.
- Bake in a preheated 350-degree F oven on ungreased baking sheets for about 12 minutes or until browned around the edges.

How BIG should the dough balls be? And the ones in the pic look like they've been crimped around the edge with a fork. 4 1/2c of flour + 1c butter etc is a LOT of dough. How many cookies can one expect to get?
