If you ask my husband, there's nothing much better than a pan of fresh-baked brownies. But because I like to add protein and nutrition wherever possible, I was looking for a way to make the next batch of brownies a bit healthier for him. This super fudgy high-protein brownies shortcut recipe was the result. It's pure decadence!

This chocolate brownies recipe is so rich and moist and, because it's a shortcut recipe, it takes very little effort to make. But you may be wondering what makes it a high-protein brownies recipe. The answer is that it contains several ingredients that add protein and flavor: eggs, plain Greek yogurt and slightly sweet and buttery mascarpone cheese. To make this decadent brownies recipe, here are the four ingredients you need to gather: a box of King Arthur gluten-free brownie mix, plain Greek yogurt, mascarpone cheese and two eggs. The chocolate chips and chopped pecans are optional. You mix up the batter, pour it into a baking pan and bake it until a toothpick shows just a few moist crumbs. If you have a chocoholic in the family as I do, be warned that these moist brownies will be inhaled quickly – so plan accordingly!
Serve these scrumptious high-protein brownies for dessert with a cup of coffee or tea, or as a sweet snack with a glass of cold milk. If you want even more decadence, my husband recommends topping these treats with a scoop of vanilla ice cream.

Ingredients
- 1/2 cup plain Greek yogurt
- 8 ounces mascarpone cheese, at room temperature
- 2 large eggs
- 17 ounces (1 box) King Arthur gluten-free brownie mix (or your favorite brownie mix)
Optional Ingredients
- 3/4 cup chocolate chips (semisweet or dark chocolate)
- 3/4 cup chopped pecans (or walnuts)
Here's how to make it:
- In a large mixing bowl, add the Greek yogurt, mascarpone cheese and eggs. Whisk to combine.
- Add the brownie mix and stir to combine. (I used King Arthur gluten-free brownie mix, but you could try this recipe with your preferred brownie mix.) Fold in the chocolate chips and/or the pecans, if using. (You can use semisweet or dark chocolate chips, and walnuts instead of pecans.)
- Pour the batter into an 8-inch baking pan that's been lined with parchment paper or sprayed with nonstick cooking spray. Spread into an even layer.
- Bake in a preheated 350-degree F oven for about 25 to 35 minutes, or until a toothpick still shows a few moist crumbs but no raw batter.
- Allow brownies to cool before slicing and serving.
- Serve brownies on their own or with a scoop of vanilla ice cream. Store leftovers in an airtight container in the refrigerator.
