It's no secret that cooking with mayonnaise is one of my favorite hacks, especially when it comes to chicken. After seeing my friend Elisa's recipe for garlic mayo chicken, some type of chicken was quickly on the dinner menu. This easy baked chicken recipe is a merging of her delicious recipe and my hall-of-fame deviled chicken recipe.
This deviled mayo baked chicken recipe has just five simple ingredients, or six if you like using parsley flakes for color like I do. Here is your short gluten-free shopping list for this budget-friendly and high-protein recipe: chicken breasts (read about the health benefits of protein), mayonnaise, Dijon mustard, Parmesan cheese (Parmesan is one of the healthiest cheeses) and garlic powder. The parsley flakes are optional, but there one of my favorite spices in my pantry and get used all the time.
If you're not a fan of chicken breasts because you think they're dry, this may be the chicken recipe for you. The mayo helps moisturize and tenderize the chicken as it bakes. The result is amazingly juicy chicken breasts that are the perfect high-protein dinner. If you prefer boneless chicken thighs, go for it! You may need to adjust the cooking time.

Ingredients
- 2 large chicken breasts, pounded to even thickness and cut in half lengthwise or crosswise
- 1/8 cup mayonnaise
- 1/8 cup Dijon mustard
- 1/8 cup Parmesan cheese, grated
- 1 teaspoon garlic powder
- parsley flakes (optional)
Here's how to make it:
- Put the chicken into an oiled baking dish. Season with salt and black pepper, to taste. (You could use four small chicken breasts if you prefer.)
- Put the mayonnaise, mustard, cheese and garlic powder into a small bowl.
- Stir to combine.
- Dip the chicken into the mixture to coat both sides. Place back into the baking dish.
- Sprinkle with parsley flakes, if using.
- Bake in a preheated 425-degree F oven for about 20 minutes, or until the chicken is cooked through. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.
- Serve the chicken hot. Store any leftover chicken in an airtight container in the fridge.
