Cuisine: European
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes plus time to cool
Servings: 10
Ingredients
- 12 ounces strawberries, hulled and quartered (or frozen strawberries)
- 12 ounces blueberries, fresh or frozen
- 12 ounces raspberries, fresh or frozen
- 3 tablespoons cane sugar (or granulated sugar)
- juice of 1/2 - 1 lime
Here's how to make it:
- Place the berries, sugar and lime juice (start with half of the lime) in a large saucepan over medium-high heat. (If you don't have cane sugar, you can use granulated sugar.)
- Bring mixture to a boil and cook, stirring every now and then, about 5 minutes. Reduce heat to the lowest setting and simmer for about 20 minutes, or until the fruit is completely soft and volume has reduced by half.
- Remove the compote from the heat and use a potato masher or the back of a large spoon to break the berries down a bit more. Carefully taste and see if you’d like more sweet or tart, and add sugar or a bit more lime juice, if needed. Let the compote cool for another 15 to 30 minutes. It will thicken as it cools. Store the compote in a jar or airtight container in the fridge.
