Grilled pork chops are one of my favorite dinners. With two bone-in, thick-cut pork chops thawing for dinner, I brainstormed to come up with a delicious, flavorful way to cook them with minimal ingredients. This easy grilled pork chop recipe was inspired by my mayonnaise chicken recipes and this grilled buttermilk and gochujang grilled chicken recipe. The mayonnaise helps marinate the meat and keep it juicy and tender, while the gochujang adds a punch of flavor. The easy recipe definitely tantalizes those taste buds!
You only need three ingredients to make this Korean-inspired pork recipe. Here is your short shopping list: bone-in pork chops, mayonnaise and gochujang (Korean chili paste). The pork chops marinate in the creamy gochujang mayo before being grilled to juicy perfection. If you don't have a grill, you can cook the pork chops in a grill pan or cast iron skillet.

Ingredients
- 2 pork chops (bone in and thick cut)
- 2 tablespoons mayonnaise
- 2 tablespoons gochujang
Here's how to make it:
- Put the mayonnaise and gochujang into a plastic food zipper bag or shallow baking dish. Add the pork chops and squish or move around to cover the pork chops completely in the marinade. Marinate in the fridge for at least 30 minutes and up to overnight. (I marinated mine for about 4 hours.)
- When ready to cook, remove the pork chops from the marinade. (If you remember, do this about 30 minutes before cooking to bring them to room temperature. If you don't have time, no big deal.) Season the pork chops with salt and pepper, if desired.
- Preheat the grill to medium heat. Cook the pork chops until well seared on the bottom, about 5 to 7 minutes.
- Flip the pork chops over and continue to cook until cooked through, about 5 to 10 minutes more. (You can baste with the leftover marinade as they cook, if desired.) Cooking time will depend on the thickness of your pork chops. Pork is cooked through at 145 degrees F internal temperature on a food thermometer.
- Let the pork chops rest a few minutes before serving.
- Serve the pork chops with your desired side dishes. This recipe can easily be doubled. Store any leftovers in an airtight container in the fridge.
