What happens when you combine ranch dressing with mayonnaise then slather it all over chicken before you bake it? Flavor magic! That's because the fat content in mayo can help keep the chicken moist as well as add juicy flavor (I learned that from my friend Donna). Because I love the taste of ranch (I know, who doesn't!), I decided to combine some ranch dressing (which also has mayo in it) with mayonnaise. It turns out that the ranch mayo baked chicken recipe makes moist and tender chicken with very little effort. That's what I call moist chicken magic!

To make this simple baked chicken recipe, here are the gluten-free ingredients you'll need to gather: boneless/skinless chicken breasts (or thighs), ranch dressing and mayonnaise. That's it! Simply combine the ranch with the mayo, slather it over the chicken and bake until it's cooked through and golden. So easy and delicious.

Ingredients
- 2 large boneless/skinless chicken breasts (mine were very large so I sliced them into smaller pieces)
- 2 tablespoons ranch dressing
- 2 tablespoons mayonnaise
- salt and pepper, to taste (optional, but I used about 3/4 teaspoon of each)
Here's how to make it:
- Place the chicken into a baking dish that's been sprayed with cooking spray. Season the chicken on both sides with salt and pepper, to taste, if desired. (Instead of chicken breasts, you could use boneless/skinless chicken thighs.)
- In a small mixing bowl, add the ranch dressing and mayonnaise. Season with salt and pepper, to taste, if desired. Stir to combine. (You could use store-bought ranch or make your own ranch dressing.)
- Spread the mixture over the chicken, ensuring that it's completely coated on both sides.
- Bake in an oven that's been preheated to 425 degrees F until the chicken is cooked through and golden, about 20 minutes. (Chicken is considered done when it reaches 165 degrees F on a food thermometer.)
- Remove from oven and serve. Garnish with fresh parsley or other fresh herb, if desired.
- Store leftover chicken in an airtight container in the refrigerator and reheat in the microwave.
