Ingredients
- 3 medium ripe bananas, mashed
- 1 cup creamy peanut butter
- 1 teaspoon baking powder
- 2 eggs
Optional Ingredients
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips
Here's how to make it:
- Line a loaf pan with parchment paper.
- Mash the banana in a mixing bowl. I used a fork to mash the banana, but you could also use a potato masher. Make sure to use ripe bananas for this recipe.
- Add the remaining ingredients and stir well to combine. If using vanilla extract, add it now. You could use any nut butter in place of the peanut butter. Coffee lovers could add 2 to 3 tablespoons of brewed coffee to the batter for even more flavor.
- Pour the batter into the prepared loaf pan.
- If desired, sprinkle the top with chocolate chips.
- Bake in a preheated 350-degree F oven for about 35 minutes, or until a toothpick comes out clean.
- Let the loaf cool a few minutes before using the parchment paper to lift it out of the pan to cool completely.
- Slice and serve. Store the bread in an airtight container to keep it fresh.
